Armenian cuisine is famous for many things but this one, called Rice Pilaf, can be arguably called a hit of the cuisine. Why? It’s very simple, yet so delicious and interesting. We prepared an authentic recipe for Rice Pilaf for you to try it!
- 0.5kg beef ham
- 0.5kg rice
- 0.5kg carrots
- 0.5kg onions
- Cumin, salt, ground black pepper
Cut the meat into cubes. Grate carrots, cut onions into slices.
It is best to cook pilaf in a thick-bottomed pot.
Heat the oil in the pot. Place the meat cubes to the pot. The cubes should brown on both sides. When the meat has browned a bit, add onions. Fry until onions become lightly brown (about 10-15 minutes). Add carrots and cook until carrots sag. Stir from time to time. When carrots are cooked, add water to the pot. Make sure that water fully covers the pilaf. Add spices to taste. Stew for about 30 minutes, do not cover the pot.
Add rice on top. Make sure that the rice layer is even. Pour as much water as needed to cover rice and a bit more. Do not stir! Bring to a boil and simmer for few minutes. Then, lower the heat to very low, cover with a lid and cook for about 45 minutes.
After 45 minutes, remove from the heat and let to stand covered for about 15 minutes.
