chicken and cheese salads in a bowl

 

What can be better than a fine bowl of chicken salad topped with cheese and wonderful dressing? With this recipe, you will be able to make such a dish by yourself and with almost no effort.

Ingredients:

  • 300g chicken breasts
  • 2 cups rice, boiled
  • 100g hard cheese
  • 1 cup peas

For the marinade:

  • 1 piece of ginger root
  • 1 tablespoon soy sauce
  • 1 tablespoon mustard
  • 1 tablespoon oyster sauce
  • 3 tablespoons oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic
  • 1 teaspoon chili pepper paste
  • 1 teaspoon parsley
  • 1 teaspoon basil

For the dressing:

  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon yogurt
  • 2 cloves garlic
  • 1 cucumber, middle-sized
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Preparation:

Wash and drain the chicken. Cut the chicken into several pieces and place them in a shallow bowl.

In a separate bowl, mix 4 chopped cloves of garlic, oyster and soy sauces, mustard, chili pepper paste, lemon juice, oil, parsley, basil and grated ginger. Salt the marinade to taste. Smear the chicken pieces with the marinade and set aside to stand for at least 2 hours. Then, cook the pieces on a grill and let them cool.

Mix rice with the peas. Place the chicken pieces on top. Top everything with thin slices of hard cheese, for example, Parmesan.

Prepare the dressing: peel and cut the cucumber into little pieces. Place the cucumber pieces in a bowl. Add mayonnaise, sour cream, yogurt, garlic cloves, salt and ground black pepper. Mix with an electric mixer until smooth. Cool the dressing in a refrigerator and pour on the salad.
