Have you ever heard of Jambalaya? It is a dish consisting of meat and vegetables mixed with rice. Jambalaya originated in Louisiana, United States and it was influenced by Spanish and French cuisines. Usually, the recipes for Jambalaya suggest adding some kind of sausages in the dish. This dinner recipe consists of Chorizo sausage – Spanish and Portuguese type of pork sausage, and chicken breasts. So, wash your hands and start preparing this awesome dinner dish! Oh… almost forgot – do not forget to follow the recipe because we know that you do not want to fail your Jambalaya 😉
- 1 tablespoon olive oil
- 2 chicken breasts
- 1 onion
- 1 red pepper
- 3 cloves garlic
- 75 g chorizo sausage
- 1 tablespoon cayenne pepper
- 250 g long grain rice
- 400 g canned tomatoes without skins
- 350 ml chicken broth
Heat the oil in a deep skillet. Chop chicken breasts intocubes and place them in the skillet. Cook chicken for 8 minutes until golden brown. Transfer chicken cubes to a plate and set aside.
Finely chop the onion and fry in the same skillet until soft and translucent. Cut the red pepper into strips, mince garlic cloves, chop chorizo sausage into cubes. Transfer pepper, garlic, chorizo sausage and cayenne pepper to the skillet. Stir everything with a wooden spoon and cook for 5 minutes.
Return chicken to the pan, add rice and pour canned tomatoes and chicken broth.
Cover the skillet with a lid and stew over a low fire for about 20-25 minutes until rice are cooked.
