ginger soup with tomatoes and lentils

Ingredients

  • 2 tablespoons olive oil
  • 1 middle-size onion
  • 2 middle-size carrots
  • 2 cloves garlic
  • 2 tablespoons grated ginger
  • 1 tablespoon tomato paste
  • 2 teaspoons cumin
  • 1 teaspoon pepper powder
  • 1 teaspoon coriander
  • 0,5 teaspoons cinnamon
  • 2 cups brown lentils
  • 200ml mashed tomatoes (or tomato puree)
  • 5 cups vegetable broth
  • 1 pinch salt
  • 1 pinch black pepper

Preparation

Chop the onion, grate carrots. Place onion and carrots in a pot with thick bottom. Pour olive oil on the onion and carrots. Steam for 5-7 minutes.

Mash garlic cloves. Transfer mashed garlic, ginger, tomato paste, spices to the pot. Steam for another few minutes.

Put lentils, mashed tomatoes, vegetable broth to the soup. Season with salt and pepper. Boil for 45 minutes.

You can add skimmed yogurt to make the soup even tastier.
