It is not that hard to make Italian Ravioli with Meat. Follow the recipe!
For Ravioli dough:
- 2 egg yolks
- Pinch salt
- ¼ cup warm water
- 180g wheat flour
- 150g minced meat
- 2 garlic cloves
- 1 onion
- 1 tablespoon dill
- 1 tablespoon parsley
- Black pepper
- 100g cheese
Finely chop garlic, onion, parsley and dill. Fry onion and meat a bit. Then add garlic, dill, parsley, black pepper and salt. Stir everything and fry until meat is cooked.
Mix one cup of flour with salt, make a little hole in the middle. Add egg yolks in the hole. Whisk the dough with a fork. Pour some warm water. Whisk the dough until
it detaches from the sides of the bowl and forms into a sticky ball. Add the rest of the flour. Start to knead the dough until it not sticky and elastic. You can add more flour to keep dough from sticking.
Flatten the dough with a rolling pin and form a large rectangle. You can use a knife to get more precise rectangle. Then fold dough in half, like closing a book. Mark the bending line. Unbend the dough and cut it in half.
Make a grid on one half of the dough and place a piece of meat in each square. Cover it with other half of the dough. Moisten the edges and stick both pieces of dough together. Cut the dough into strips and then cut every strip in half to get little rectangles with one piece of meat in each (take a look at the picture below). Press the sides of each ravioli with your fingers so that they will not tear up while cooking.
Boil the water, salt it, transfer ravioli in the boiling water and boil for 8-10 minutes.
You can grate some cheese on top of your ravioli before serving.
