irish lamb stew

If you want something special for today’s dinner, try this recipe for Irish Lamb Stew.

Ingredients

  • 1,5 kg lamb breast or shoulder
  • 2 teaspoons salt
  • Black pepper
  • 10 potatoes
  • 4 onions
  • 4 carrots
  • 500 ml water
  • 1 meat stock cube
  • 2 twigs rosemary
  • 1 handful parsley

Preparation

Chop meat into chunks. Place stock cube into a pot, pour water and bring to the boil to get the broth.

Put the meat and chopped vegetables in layers in a casserole. Season every layer with salt and black pepper. Pour the broth over the meat and vegatables and sprinkle with rosemary. Place the casserole in the oven, cover with a lid and cook for 2 hours. While cooking, meat and vegetables should always be covered with liquid, pour some water if you notice that the stew is not fully covered with liquid.
