Ingredients
- 200 g prawns (peeled)
- 150 g Basmati rice
- 2 teaspoons butter
- Pinch salt
- Pinch black pepper
- 2 teaspoons olive oil
- 2 cloves garlic
- 1 onion
- 1 red pepper
- 1 teaspoon ground ginger
- 2 teaspoons curry powder
- 1.5 l chicken broth
- 200 ml coconut milk
Preparation
Firsly, boil Basmati rice. When rice is cooked, remove the water and set rice aside.
Melt the butter in a big skillet. Add prawns, pour salt and black pepper. Cook prawns for 2-3 minutes. Set aside to cool down.
Heat a dash of olive oil in a big pot. Finely chop onion and garlic. Cut the red pepper into small cubes. Add onion, garlic and pepper to the pot. Cook the vegetables
for 5 minutes, then add ginger and curry.
Pour in chicken broth and coconut milk. Transfer prawns and rice to the pot. Boil for 5 minutes.
