A hot bowl of thick vegetable soup sounds great when you get back from work on a cold day and need something to warm, doesn’t it? This recipe is exactly what you need in such situation. Very simple and delicious Italian thick soup is a tradition that has begun many years ago in a sunny land of boot-shaped country. You just need to try it for dinner!
Ingredients
- 100g cauliflower
- 100g leek
- 100g carrots
- 100g celery, stalks
- 100g red cabbage
- 100g spinach (or beetroot leaves)
- 1 vegetable stock cube
- 100g Parmesan cheese
- 1 tablespoon olive oil
- 1 pinch freshly ground black pepper
- 1 pinch salt
Preparation
Place a pot with water over the heatand bring to a boil. Toss one vegetable stock cube in and wait until it melts.
Cut all the vegetables into similar-sized pieces. Add vegetables pieces into the boiling broth and cook for 5 minutes.
Remove as much water as needed for the soup to be thick.
Grate Parmesan cheese and sprinkle with ground pepper before serving.
