mashed carrot orange and gigner soup

This recipe is an instruction for an orange miracle in your bowl. Carrots, oranges, ginger in your plate together makes not only a very nutritious meal but also very delicious dinner.

Ingredients

  • 500g carrots
  • 150g potatoes
  • 1 onion
  • 3 oranges
  • 2 tablespoons oil
  • 750ml vegetable broth
  • 200ml coconut milk, light
  • 1 tablespoons grated ginger
  • 0.5 teaspoons salt
  • 1 pinch black pepper
  • 1 pinch chili pepper
  • 2 tablespoons sesame seeds

Preparation

Finely chop the onion and fry it in the oil. When it’s almost done, add the carrots and potatoes to the skillet.

Place the onion, carrots and potatoes to a pot. Pour the vegetable broth and cook for about 20 minutes.

Squeeze the juice out of 3 oranges. Grate the peel of one orange. Add orange juice, grated orange peel and grated ginger to the soup. Blend everything with an electric mixer until smooth.

Add salt, black pepper and chili pepper. Stir in the coconut milk.

In a skillet, cook the sesame seeds for few minutes. Sprinkle the soup with fried sesame seeds before serving.
