This quick tomato soup will work as a cure from the depression on rainy days. The warm and delicious soup will brighten your day while flowing down your throat and warming you from the inside.

Ingredients

  • 5 tomatoes
  • 2 boiled potatoes
  • 1l vegetable broth
  • 1 onion
  • 2 cloves garlic
  • 50g cheese
  • 3 tablespoons olive oil
  • 1 handful fresh basil

Preparation

Brown onions in a hot oil until soft and translucent.

Blend potatoes, tomatoes, garlic and onions with a food processor.

Pour vegetable broth to a pot and bring to a boil. Add blended mixture. Bring to a boil again. That’s it!
