chicken salad with cauliflower and pineapple

If you follow this recipe you will easily prepare this amazing chicken salad. Cauliflower and pineapple add distinct, rather exotic flavor to the salad. To sum up – an amazing salad for amazing dinner!


  • 300 g chicken breasts
  • 600 g cauliflowers
  • 300 g canned pineapples
  • 200 g pumpkin seeds
  • Chicken spice mix
  • 100 g mayonnaise
  • Pinch salt


Cut chicken breasts into strips, season with spice mix and salt. Place in a skillet and fry (it would be better not to use any oil for frying). When the meat browns nicely, add pumpkin seeds and cook for a bit.

Tear apart or cut cauliflowers into small pieces. Cut pineapples into small pieces. Combine cauliflower and pineapple pieces with mayonnaise. Transfer chicken and stir everything.

The salad is much tastier after staying in a refrigerator for a short period of time.
