This homemade pumpkin hummus is very nutritious, tasty and just perfect. Hummus is very simple to make. Try this recipe and prepare some of this amazing chickpea paste.😉
- 650g pumpkin, no peel, no seeds, cut in cubes
- 3 cloves garlic, unpeeled
- 1 tablespoon olive oil
- 1 pinch salt
- 1 pinch black pepper
- 400g canned chickpeas, rinsed and drained
- 40g roasted cashew nuts
- 125ml water
Preheat the oven to 200 degrees Celsius.
Line a baking sheet with parchment paper. Place pumpkin cubes and garlic to the baking sheet. Drizzles with olive oil, sprinkle with salt and black pepper. Cook in the oven for about 30 minutes, until pumpkin cubes soften and garlic browns.
Let pumpkin cubes and garlic to cool down. Remove the peel of garlic, put to a food processor together with pumpkin cubes, chickpeas, cashew nuts and water. Add a pinch of both, salt and black pepper and process for about 2-3 minutes until smooth mass.
Drizzle with oil before serving. Sprinkle with caraway, chili powder. Serve with toasts or vegetables.
