Chicken stuffed with potatos

You can stuff a chicken with a huge variety of foods: cheese, vegetables, other meats, herbs, and the list goes on and on. With this Stuffed Chicken Recipe, we will use various vegetables, lemon and garlic.

Ingredients

  • 1500g chicken
  • 1 lemon
  • 2 teaspoons salt
  • 2 cloves garlic
  • 2 tablespoons oil
  • 150ml dry white wine
  • 2 tablespoons spices or herbs of your choice
  • 1 teaspoon ground allspice
  • 2 sweet red bell peppers
  • 2 sweet yellow bell peppers
  • 1 fennel, its bulb
  • 2 red onions
  • 450g potatoes

Preparation

Preheat the oven to 200 degrees Celsius.

Halve peppers. Remove the seeds and halve once again. Cut fennel in slices lengthwise. Peel and slice onions. Cut potatoes in pieces. Halve lemon. Peel garlic cloves.

Combine salt, allspice and spices or herbs of your choice. Rub the chicken with this mixture.

Stuff the chicken with garlic, lemon and all the vegetables (except potatoes).

Place the stuffed chicken in a baking dish. Arrange potatoes aside the chicken. Poor wine. Smear the top of the chicken with oil.

Sprinkle everything with caraway. Cover the baking dish and bake in the oven for about 1h and 15 minutes. Remove the lid and cook for about 20 minutes more.
