Potato fingers with spinach in a plate

  • 500g potatoes
  • 1 egg yolk
  • 1 tablespoon flour
  • 2 pinches salt
  • 1 pinch ground nutmeg
  • 2 tablespoons butter
  • 0.5 cups heavy cream
  • 0.25 cups vegetable broth
  • 2 teaspoons mustard
  • 1 teaspoon oregano
  • 200g spinach, fresh or frozen
  • 1 onion
  • 1 tablespoon oil


The recipe will be divided in three parts: fingers, spinach and wonderful sauce. Let’s start with the fingers:

Boil in water or bake in oven uncut and unpeeled potatoes. When the potatoes cool a bit, process them with electric potato grater. Stir in egg yolk, flour, 1 pinch of salt and nutmeg. Carefully knead with your hands.

Form not very big fingers from the potato mass. Potato fingers should be approximately similar to the size of your index finger.

Melt butter and oil in a saucepan. Cook potato fingers until golden brown from all sides.

Now it’s the time to prepare spinach:

Cut onion in small pieces and cook in oil until tender. Before adding onions to the oil, add a pinch of salt. Tear the spinach to pieces and add them to the pan. If you’re using frozen spinach, do not bother to tear them, just throw frozen spinach cubes to the pan and you’re good to go. Cover the pan with a lit and saute everything until tender and nice.

While fingers and spinach are cooking, you can use this time for preparing the sauce:

Bring vegetable broth to a boil. Pour heavy cream and remove from the heat. Add oregano and mustard. Stir well.

Serve with potato fingers and still warm spinach.
