uzbek shakarob tomato salad

I bet you have never cooked anything from Uzbek cuisine. It is actually a shame because Uzbek cuisine is very rich and this tomato salad is a perfect example to prove it. Try it yourself. The preparation process is very quick.

Ingredients

  • 2 onions
  • 6 ripe tomatoes
  • Handful cilantro or basil
  • Pinch ground black pepper (or to taste)
  • 0.25 teaspoons salt (or to taste)
  • 1 teaspoon ground coriander seeds
  • 1 pomegranate (only seeds)

Preparation
Deseed the pomegranate. Cut onions into thin slices and soak them in salted water.

Cut tomatoes into slices. Sprinkle with chopped cilantro or basil, black pepper, ground coriander seeds, salt.

Drain onion slices and transfer them to a bowl. Cover the bowl with a lid or a plate and lightly shake the bowl to break onion slices into smaller pieces. Add tomatoes to the bowl. Squeeze in pomegranate juice (use only a half of seeds). Add the remaining part of seeds to the bowl. Stir everything well.

Serve together with various meat dishes.
