- 0,5l of heavy cream
- Vanilla bean (or 2 teaspoons of vanilla sugar)
- 6 egg yolks
- 100g of sugar
- 1 tablespoon of powdered sugar
Pour the cream into the pod. Scrape and finely chop the vanilla bean. Put the scrapped and finely chopped bean in the cream. If you use vanilla sugar, place it in the pod. Place it over a low fire. When it reaches the boiling point, lower the heat and bake it for 5 minutes.
Combine egg yolks and sugar and beat it until the mass becomes fluffy. Pour the cream into the yolks and finely stir with a spoon. Percolate to remove the pieces of vanilla bean. Pour the mass into the ramekins so that ¼ of the ramekin will be left empty.
Put the ramekins in the deep roasting pan filled with boiling water. Pour enough boiling water into the pan to cover halfway up the sides of the ramekins. Bake in the oven preheated to 140C. If the ramekins are small, bake them 30min, if bigger size – 40min.
If the surface of the desserts is solid, you can take them from the oven. Cool the ramekins. Sprinkle with powdered sugar prior to serving.
