tomato and ricotta bruschetta

Bruschetta is an appetizer from sunny Italy. It consists of grilled bread, olive oil and variations of toppings. And we have a very good news – Bruschetta is such an easy and quick meal to cook that even people with no experience in cooking could make it.


  • 1 loaf ciabatta bread
  • 15 cherry tomatoes
  • 5 twigs rosemary
  • 2 teaspoons balsamic vinegar
  • 125g ricotta cheese
  • 2 tablespoons olive oil
  • 2 pinches salt
  • 2 pinches blackpepper


Cut ciabatta into slices and fry on a grill with some olive oil or in a skillet with no oil until golden brown.

Use rosemary twigs instead of skewers. Thread cherry tomatoes onto the twigs of rosemary. Fry twigs on the grill for about 2-3 minutes until tomatoes soften.

Spread some cheese and add few grilled tomatoes on each slice of ciabatta.

Drizzle with olive oil and balsamic vinegar. Season with salt, black pepper.
